Shredded Beef Ragout over Roasted Broccoflower


Roasted Broccoflower
 
Ingredients:
·      1 Head of Broccoflower
·      Olive Oil
·      Salt and Pepper

Directions:
1.     Lightly coat broccoflower with olive oil
2.     Salt and pepper to taste
3.     Roast at 400F for about 25 minutes

Shredded Beef Ragout

Ingredients:
·      1 Carrot
·      ½ Onion
·      Garlic
·      Canned Tomatoes
·      Olive Oil
·      Slow Cooked Beef or Slow cooked beef leftovers
·      1 tbsp A1 Steak Sauce or Worcestershire  
·      Red wine
·      Oregano
·      Salt
·      Pepper
·      Bay leaf

Directions:
1.     Coarsely grate carrot, chop onion and sauté both in olive oil
2.     Add minced garlic after onions turn translucent
3.     Deglaze with red wine and cook off the alcohol
4.     Add tomatoes, shredded beef, steak sauce, and seasoning.
5.     Simmer until content.
