Ingredients:
- 8 Large eggs
- Bell pepper
- Roasted butternut squash
- Olive oil
- Onion
- Oregano
- Basil
- Salt and Pepper
- Parmesan cheese
Directions:
- Sauté onion and bell pepper in olive oil until it begins to brow
- Add in cooked butternut squash and heat through
- Add scrambled eggs, oregano, basil, and pepper to vegetable mixture. Cook for 5 min on low heat
- Finish cooking eggs under broiler
- Add cheese, salt, and more spices if desired. Melt cheese under the broiler.
